Ingredients
- Basmati rice - 150 grams
- Prawns (cleaned and deveined) - 250 grams
- Onion (sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Green chilies (slit) - 2
- Kadai masala (or garam masala) - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cilantro leaves (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Ghee or oil - 2 tablespoons
- Salt - to taste
- Water - 400 ml
Steps
- Rinse the basmati rice in cold water until the water runs clear, then soak it for 30 minutes.
- Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them sizzle.
- Add the sliced onion and sauté until golden brown.
- Stir in ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.
- Add the chopped tomato and cook until it softens, then mix in the kadai masala, coriander powder, turmeric powder, and salt. Cook for 3-4 minutes.
- Add the cleaned prawns and cook until they turn pink, about 3-5 minutes.
- Pour in 400 ml of water and bring it to a boil. Once boiling, add the soaked and drained basmati rice.
- Stir gently, cover the pot, and reduce the heat to low. Cook for about 15-20 minutes, or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork.
- Garnish with chopped cilantro and mint leaves before serving.
