- Bell pepper (red or green) - 1 medium, diced
- Onion - 1 medium, finely chopped
- Tomatoes - 2 medium, pureed
- Ginger - 1 inch, grated
- Garlic - 3 cloves, minced
- Green chilies - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
- Salt - to taste
Steps
- Heat oil in a kadai or heavy-bottomed pan over medium heat.
- Add cumin seeds and let them splutter, then add chopped onions and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chilies, cooking for another minute until fragrant.
- Add the pureed tomatoes and cook until the oil begins to separate from the mixture.
- Mix in the turmeric, coriander powder, red chili powder, and salt. Cook for 2-3 minutes.
- Add the cubed tofu and diced bell pepper, gently folding them into the gravy.
- Sprinkle garam masala over the dish and stir to combine.
- Cover and cook for an additional 5-7 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves before serving.
