Ingredients

  • Tofu - 200 grams, pressed and cubed
  • Bell pepper (red or green) - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Tomatoes - 2 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chilies - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Salt - to taste

Steps

  1. Heat oil in a kadai or heavy-bottomed pan over medium heat.
  2. Add cumin seeds and let them splutter, then add chopped onions and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chilies, cooking for another minute until fragrant.
  4. Add the pureed tomatoes and cook until the oil begins to separate from the mixture.
  5. Mix in the turmeric, coriander powder, red chili powder, and salt. Cook for 2-3 minutes.
  6. Add the cubed tofu and diced bell pepper, gently folding them into the gravy.
  7. Sprinkle garam masala over the dish and stir to combine.
  8. Cover and cook for an additional 5-7 minutes, allowing the flavors to meld.
  9. Garnish with fresh coriander leaves before serving.
