- Mutton, bone-in - 400 grams
- Onion, finely chopped - 1 medium (150 grams)
- Tomato, pureed - 1 medium (100 grams)
- Ginger-garlic paste - 1 tablespoon
- Green chilies, slit - 2
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Oil - 3 tablespoons
- Salt - to taste
- Fresh coriander leaves, chopped - for garnish
Steps
- Heat oil in a kadai or deep pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.
- Add the mutton pieces to the pan and sear them on high heat until they are browned on all sides.
- Lower the heat and add red chili powder, turmeric powder, and coriander powder. Mix well to coat the mutton with the spices.
- Pour in the tomato puree and season with salt. Stir to combine and cook for about 5 minutes, allowing the tomatoes to reduce.
- Add enough water to cover the mutton, bring to a boil, then cover and simmer on low heat for 40-45 minutes, or until the mutton is tender.
- Once cooked, sprinkle garam masala over the dish and mix gently.
- Garnish with fresh coriander leaves before serving.
