- Green bell pepper (sliced) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (vegetable or mustard) - 2 tablespoons
- Fresh coriander leaves (for garnish) - a handful
Steps
- Heat oil in a kadai or a heavy-bottomed pan over medium heat.
- Add sliced onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Add the mutton pieces and cook on high heat until they are browned on all sides.
- Sprinkle in the red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton with the spices.
- Add chopped tomatoes and cook until they soften and incorporate into the mixture.
- Lower the heat, cover, and let it simmer for about 25-30 minutes, stirring occasionally, until the mutton is tender.
- Once the mutton is cooked, add the sliced green bell pepper and garam masala. Cook for another 5 minutes on high heat to achieve a slight char.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
