- Garlic - 1 teaspoon, minced
- Green chili - 1, slit
- Bell pepper - 1 small, diced
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a kadai or deep pan over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until it turns golden brown.
- Stir in the grated ginger, minced garlic, and green chili; cook for 1-2 minutes until fragrant.
- Add the diced bell pepper and sauté for another 2-3 minutes until slightly tender.
- Mix in the tomato puree and cook until the oil starts to separate from the mixture.
- Add the coriander powder, garam masala, turmeric powder, red chili powder, and salt; stir well to combine.
- Add the sliced mushrooms, mixing gently to coat them with the spices.
- Cover and cook for 5-7 minutes until the mushrooms are tender and have released their moisture.
- Remove the lid, stir well, and let it cook for another 2-3 minutes to thicken the gravy.
- Garnish with fresh coriander leaves and serve hot.
