- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Cooking oil - 2 tablespoons

- Fresh coriander leaves - for garnish
Steps
- Heat the cooking oil in a kadai or large pan over medium heat.
- Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili; cook for another 2 minutes.
- Add the pureed tomato and cook until the oil begins to separate from the mixture.
- Mix in the diced bell pepper, coriander powder, turmeric powder, and salt; cook for 5 minutes until the bell pepper softens.
- Add the sliced mushrooms and stir well to combine; cook for another 5-7 minutes until the mushrooms are tender.
- Sprinkle the garam masala over the dish, mix well, and cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
