Ingredients

  • Tomato - 1 large, pureed
  • Ginger - 1 inch, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Cooking oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the cooking oil in a kadai or large pan over medium heat.
  2. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili; cook for another 2 minutes.
  5. Add the pureed tomato and cook until the oil begins to separate from the mixture.
  6. Mix in the diced bell pepper, coriander powder, turmeric powder, and salt; cook for 5 minutes until the bell pepper softens.
  7. Add the sliced mushrooms and stir well to combine; cook for another 5-7 minutes until the mushrooms are tender.
  8. Sprinkle the garam masala over the dish, mix well, and cook for an additional 2 minutes.
  9. Garnish with fresh coriander leaves before serving.
