  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (coconut or vegetable) - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the oil in a large kadai or wok over medium heat.
  2. Add cumin seeds and let them splutter for a few seconds.
  3. Add the chopped onion, grated ginger, and minced garlic. Sauté until the onion turns translucent.
  4. Stir in the pureed tomato and cook for about 5 minutes until the mixture thickens.
  5. Add the diced bell peppers, carrots, green beans, and cauliflower. Mix well to coat the vegetables with the spices.
  6. Sprinkle in the coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Stir to combine.
  7. Cover the kadai and let the vegetables cook for about 10-12 minutes, stirring occasionally, until they are tender.
  8. Once cooked, sprinkle garam masala over the vegetables and give it a final stir.
  9. Garnish with fresh coriander leaves and serve hot with rice or roti.
