- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (coconut or vegetable) - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat the oil in a large kadai or wok over medium heat.
- Add cumin seeds and let them splutter for a few seconds.
- Add the chopped onion, grated ginger, and minced garlic. Sauté until the onion turns translucent.
- Stir in the pureed tomato and cook for about 5 minutes until the mixture thickens.
- Add the diced bell peppers, carrots, green beans, and cauliflower. Mix well to coat the vegetables with the spices.
- Sprinkle in the coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Stir to combine.
- Cover the kadai and let the vegetables cook for about 10-12 minutes, stirring occasionally, until they are tender.
- Once cooked, sprinkle garam masala over the vegetables and give it a final stir.
- Garnish with fresh coriander leaves and serve hot with rice or roti.
