- Lamb shoulder - 400 grams, cubed
- Yogurt - 150 grams
- Ginger-garlic paste - 2 tablespoons
- Garam masala - 1 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 tablespoon
- Oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Tomatoes - 2 medium, pureed
- Capsicum (bell pepper) - 1 medium, diced
- Green chilies - 2, slit
- Fresh coriander leaves - for garnish
Steps
- In a bowl, mix the yogurt, ginger-garlic paste, garam masala, red chili powder, turmeric powder, cumin powder, coriander powder, salt, and lemon juice to create a marinade.
- Add the cubed lamb to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes.
- Heat 1 tablespoon of oil in a kadai or deep pan over medium heat. Add the chopped onion and sauté until golden brown.
- Stir in the pureed tomatoes and cook until the oil separates from the mixture, approximately 5-7 minutes.
- Add the marinated lamb to the onion-tomato mixture and cook on medium-high heat until the lamb is browned.
- Pour in 1 cup of water, cover, and let it simmer for 20-25 minutes until the lamb is tender.
- In a separate pan, heat the remaining tablespoon of oil and sauté the diced capsicum and slit green chilies for 2-3 minutes.
- Add the sautéed capsicum to the lamb curry and mix well. Cook for an additional 5 minutes.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
