Ingredients
- Lamb shoulder - 300 grams, cubed
- Greek yogurt - 150 grams
- Onion - 1 medium, finely chopped
- Ginger paste - 1 tablespoon
- Garlic paste - 1 tablespoon
- Tomato puree - 2 tablespoons
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Fresh cilantro - a handful, chopped
- Salt - to taste
- Water - 200 ml
Steps
- Heat the vegetable oil in a kadai or a deep skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until golden brown.
- Stir in ginger paste and garlic paste, cooking for another 2-3 minutes until fragrant.
- Add the cubed lamb and cook on high heat, stirring frequently until browned on all sides.
- Mix in the tomato puree, slit green chili, and all the dry spices (coriander powder, garam masala, turmeric powder, and salt). Stir well to coat the lamb.
- Add the Greek yogurt slowly, mixing continuously to avoid curdling. Cook for 5 minutes.
- Pour in the water, bring to a boil, then reduce heat to low, cover, and let it simmer for about 25-30 minutes or until the lamb is tender.
- Once cooked, adjust salt if necessary and garnish with chopped fresh cilantro before serving.
