Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Greek yogurt - 150 grams
  • Onion - 1 medium, finely chopped
  • Ginger paste - 1 tablespoon
  • Garlic paste - 1 tablespoon
  • Tomato puree - 2 tablespoons
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - a handful, chopped
  • Salt - to taste
  • Water - 200 ml

Steps

  1. Heat the vegetable oil in a kadai or a deep skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in ginger paste and garlic paste, cooking for another 2-3 minutes until fragrant.
  4. Add the cubed lamb and cook on high heat, stirring frequently until browned on all sides.
  5. Mix in the tomato puree, slit green chili, and all the dry spices (coriander powder, garam masala, turmeric powder, and salt). Stir well to coat the lamb.
  6. Add the Greek yogurt slowly, mixing continuously to avoid curdling. Cook for 5 minutes.
  7. Pour in the water, bring to a boil, then reduce heat to low, cover, and let it simmer for about 25-30 minutes or until the lamb is tender.
  8. Once cooked, adjust salt if necessary and garnish with chopped fresh cilantro before serving.
