Ingredients

  • Lamb shoulder - 300 grams, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, pureed
  • Green bell pepper - 1 medium, diced
  • Ginger - 1 tablespoon, minced
  • Garlic - 1 tablespoon, minced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Fresh cilantro - for garnish
  • Water - 200 ml

Steps

  1. Heat the coconut oil in a kadai or deep pan over medium heat. Add cumin seeds and allow them to splutter.
  2. Add the chopped onion and sauté until golden brown.
  3. Stir in the minced ginger and garlic, cooking for an additional 2 minutes until fragrant.
  4. Add the diced lamb and cook until browned on all sides.
  5. Incorporate the pureed tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook for about 5 minutes until the mixture thickens.
  6. Add the diced green bell pepper and mix well.
  7. Pour in the water, cover the pan, and let it simmer for 25-30 minutes, or until the lamb is tender.
  8. Once cooked, stir in the garam masala and give it a final mix.
  9. Garnish with fresh cilantro before serving.
