- Lamb shoulder - 300 grams, diced
- Onion - 1 medium, finely chopped
- Tomato - 1 large, pureed
- Green bell pepper - 1 medium, diced
- Ginger - 1 tablespoon, minced
- Garlic - 1 tablespoon, minced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Coconut oil - 2 tablespoons
- Salt - to taste
- Fresh cilantro - for garnish
- Water - 200 ml
Steps
- Heat the coconut oil in a kadai or deep pan over medium heat. Add cumin seeds and allow them to splutter.
- Add the chopped onion and sauté until golden brown.
- Stir in the minced ginger and garlic, cooking for an additional 2 minutes until fragrant.
- Add the diced lamb and cook until browned on all sides.
- Incorporate the pureed tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook for about 5 minutes until the mixture thickens.
- Add the diced green bell pepper and mix well.
- Pour in the water, cover the pan, and let it simmer for 25-30 minutes, or until the lamb is tender.
- Once cooked, stir in the garam masala and give it a final mix.
- Garnish with fresh cilantro before serving.
