- Lamb shoulder - 300 grams, cut into cubes
- Ghee or olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Ginger - 1 tablespoon, minced
- Garlic - 1 tablespoon, minced
- Tomato - 1 medium, chopped
- Green bell pepper - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon (adjust to taste)
- Salt - to taste
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Water - 100 ml
Steps
- Heat the ghee or olive oil in a kadai or deep skillet over medium heat.
- Add the cumin seeds and sauté for a few seconds until they crackle.
- Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced ginger and garlic, cooking for 1-2 minutes until fragrant.
- Add the lamb cubes, stirring well to coat in the onion mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.
- Add the chopped tomato, green bell pepper, and red bell pepper. Stir to combine and cook for another 5 minutes.
- Sprinkle in the coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well to ensure the spices coat the meat and vegetables.
- Pour in the water, bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally, until the lamb is tender.
- Once cooked, garnish with fresh cilantro and serve hot with whole grain roti or brown rice.
