Ingredients

  • Lamb shoulder - 300 grams, cut into cubes
  • Ghee or olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Ginger - 1 tablespoon, minced
  • Garlic - 1 tablespoon, minced
  • Tomato - 1 medium, chopped
  • Green bell pepper - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Water - 100 ml

Steps

  1. Heat the ghee or olive oil in a kadai or deep skillet over medium heat.
  2. Add the cumin seeds and sauté for a few seconds until they crackle.
  3. Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
  4. Stir in the minced ginger and garlic, cooking for 1-2 minutes until fragrant.
  5. Add the lamb cubes, stirring well to coat in the onion mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.
  6. Add the chopped tomato, green bell pepper, and red bell pepper. Stir to combine and cook for another 5 minutes.
  7. Sprinkle in the coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well to ensure the spices coat the meat and vegetables.
  8. Pour in the water, bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally, until the lamb is tender.
  9. Once cooked, garnish with fresh cilantro and serve hot with whole grain roti or brown rice.
