- Bell pepper (red or green) - 1 medium, diced
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger - 1 inch piece, grated

- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil (coconut or vegetable) - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat the oil in a kadai or deep pan over medium heat.
- Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they are golden brown.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 2 minutes.
- Add the pureed tomato and cook until the mixture thickens and oil separates, about 5-7 minutes.
- Sprinkle in the coriander powder, cumin powder, turmeric powder, and salt; mix well.
- Add the cauliflower florets and diced bell pepper, stirring to coat them with the spice mixture.
- Pour in a splash of water (about 1/4 cup) to help steam the vegetables, cover, and cook for about 10-12 minutes until the cauliflower is tender.
- Once cooked, sprinkle garam masala over the top and mix gently.
- Garnish with fresh cilantro before serving.
