Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Bell pepper (red or green) - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 inch piece, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Oil (coconut or vegetable) - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat the oil in a kadai or deep pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they are golden brown.
  4. Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 2 minutes.
  5. Add the pureed tomato and cook until the mixture thickens and oil separates, about 5-7 minutes.
  6. Sprinkle in the coriander powder, cumin powder, turmeric powder, and salt; mix well.
  7. Add the cauliflower florets and diced bell pepper, stirring to coat them with the spice mixture.
  8. Pour in a splash of water (about 1/4 cup) to help steam the vegetables, cover, and cook for about 10-12 minutes until the cauliflower is tender.
  9. Once cooked, sprinkle garam masala over the top and mix gently.
  10. Garnish with fresh cilantro before serving.
