  • Garlic - 1 teaspoon, minced
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons (preferably mustard or vegetable oil)
  • Cilantro - for garnish, chopped

Steps

  1. Heat oil in a kadai or skillet over medium heat.
  2. Add cumin seeds and sauté until they crackle.
  3. Add chopped onions and sauté until they turn translucent.
  4. Stir in the grated ginger and minced garlic, cooking for an additional minute.
  5. Add the diced red and green bell peppers, cooking until they soften, about 3-4 minutes.
  6. Mix in the coriander powder, turmeric powder, red chili powder, and salt; sauté for 1-2 minutes until fragrant.
  7. Add the cauliflower florets and mix well to coat them with the spices.
  8. Pour in the pureed tomato and stir well; cover and cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  9. Sprinkle garam masala over the top and mix gently; cook for an additional 2 minutes.
  10. Garnish with chopped cilantro before serving.
