Steps
- Heat oil in a kadai or skillet over medium heat.
- Add cumin seeds and sauté until they crackle.
- Add chopped onions and sauté until they turn translucent.
- Stir in the grated ginger and minced garlic, cooking for an additional minute.
- Add the diced red and green bell peppers, cooking until they soften, about 3-4 minutes.
- Mix in the coriander powder, turmeric powder, red chili powder, and salt; sauté for 1-2 minutes until fragrant.
- Add the cauliflower florets and mix well to coat them with the spices.
- Pour in the pureed tomato and stir well; cover and cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
- Sprinkle garam masala over the top and mix gently; cook for an additional 2 minutes.
- Garnish with chopped cilantro before serving.
