Ingredients

  • Carrots - 300 grams, grated

  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Ginger - 1 inch, grated
  • Green chili - 1, finely chopped
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the coconut oil in a kadai or deep pan over medium heat.
  2. Add cumin seeds and mustard seeds, and allow them to splutter.
  3. Stir in the grated ginger and chopped green chili, sautéing for 1-2 minutes until fragrant.
  4. Add the grated carrots to the pan and mix well with the spices.
  5. Sprinkle in the turmeric powder, coriander powder, and salt, stirring to combine.
  6. Cover the pan and cook on low heat for about 15 minutes, stirring occasionally, until the carrots are tender.
  7. Once cooked, add garam masala and mix thoroughly.
  8. Remove from heat and stir in the chopped fresh coriander and lemon juice.
  9. Serve hot as a side dish or over a bed of rice.
