- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon

- Fresh coriander - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat the coconut oil in a kadai or deep pan over medium heat.
- Add cumin seeds and mustard seeds, and allow them to splutter.
- Stir in the grated ginger and chopped green chili, sautéing for 1-2 minutes until fragrant.
- Add the grated carrots to the pan and mix well with the spices.
- Sprinkle in the turmeric powder, coriander powder, and salt, stirring to combine.
- Cover the pan and cook on low heat for about 15 minutes, stirring occasionally, until the carrots are tender.
- Once cooked, add garam masala and mix thoroughly.
- Remove from heat and stir in the chopped fresh coriander and lemon juice.
- Serve hot as a side dish or over a bed of rice.
