- Garlic - 4 cloves, minced
- Green chili - 1, slit
- Capsicum (Bell Pepper) - 1 medium, cubed
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Fresh coriander leaves - for garnish
- Salt - to taste
- Cooking oil - 2 tablespoons
Steps
- Boil the eggs in water for 10 minutes, then cool them in cold water, peel, and set aside.
- Heat oil in a kadai or deep pan over medium heat, add cumin seeds, and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the ginger and garlic, cooking for another 2 minutes until the raw smell disappears.
- Add the pureed tomatoes, green chili, turmeric powder, red chili powder, and salt; cook until the oil separates from the mixture.
- Mix in the coriander powder and garam masala, then add the cubed capsicum and cook for an additional 3-4 minutes.
- Gently add the boiled eggs to the masala, coating them well with the spices. Cook for another 5 minutes to allow the flavors to meld.
- Garnish with fresh coriander leaves and serve hot with naan or rice.
