Ingredients

  • Eggs - 4 large
  • Onion - 1 medium, finely chopped
  • Tomatoes - 2 medium, pureed
  • Ginger - 1 inch, grated
  • Garlic - 4 cloves, minced
  • Green chili - 1, slit
  • Capsicum (Bell Pepper) - 1 medium, cubed
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Fresh coriander leaves - for garnish
  • Salt - to taste
  • Cooking oil - 2 tablespoons

Steps

  1. Boil the eggs in water for 10 minutes, then cool them in cold water, peel, and set aside.
  2. Heat oil in a kadai or deep pan over medium heat, add cumin seeds, and let them splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the ginger and garlic, cooking for another 2 minutes until the raw smell disappears.
  5. Add the pureed tomatoes, green chili, turmeric powder, red chili powder, and salt; cook until the oil separates from the mixture.
  6. Mix in the coriander powder and garam masala, then add the cubed capsicum and cook for an additional 3-4 minutes.
  7. Gently add the boiled eggs to the masala, coating them well with the spices. Cook for another 5 minutes to allow the flavors to meld.
  8. Garnish with fresh coriander leaves and serve hot with naan or rice.
