Ingredients
- Eggs - 4 large
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Tomatoes - 2 medium, chopped
- Capsicum (bell pepper) - 1 small, diced
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Fresh cilantro - 2 tablespoons, chopped for garnish
Steps
- Boil the eggs in a pot of water for about 10 minutes. Once done, cool them under running water, peel, and set aside.
- Heat vegetable oil in a kadai or deep pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the ginger-garlic paste and slit green chili, cooking for another 1-2 minutes until fragrant.
- Add the chopped tomatoes and cook until they are soft and oil separates from the mixture.
- Mix in the diced capsicum, red chili powder, turmeric powder, coriander powder, and salt. Cook for an additional 3-4 minutes.
- Add the boiled eggs to the gravy, gently stir to coat them in the sauce, and let simmer for 5 minutes.
- Sprinkle garam masala over the curry and mix gently.
- Garnish with fresh cilantro before serving.
