Ingredients
- Basmati rice - 200 grams
- Boiled eggs - 4 large
- Onion - 1 large, thinly sliced
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 tablespoon
- Green chilies - 2, slit
- Kadai masala (coriander seeds, cumin seeds, black pepper, and dried red chilies) - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Cilantro - 2 tablespoons, chopped
- Mint leaves - 2 tablespoons, chopped
- Cooking oil - 2 tablespoons
- Salt - to taste
- Water - 500 ml
Steps
- Rinse the basmati rice under water until the water runs clear, then soak it in water for 30 minutes.
- In a pan, heat 2 tablespoons of oil over medium heat and add the sliced onions. Sauté until they are golden brown.
- Add ginger-garlic paste and green chilies to the onions, and sauté for another 2 minutes until fragrant.
- Stir in the chopped tomato and cook until it softens, about 3-4 minutes.
- Add the kadai masala, turmeric powder, red chili powder, and salt. Cook for 2 minutes until the spices are well combined.
- Add the boiled eggs to the pan and gently coat them with the spice mixture, cooking for an additional 2-3 minutes.
- In a separate pot, boil 500 ml of water and add the soaked basmati rice along with salt. Cook until the rice is 70% done, then drain it.
- Layer the partially cooked rice over the egg and spice mixture in the pan. Sprinkle garam masala, cilantro, and mint leaves on top.
- Cover the pan with a tight-fitting lid and cook on low heat for 15-20 minutes until the rice is fully cooked and has absorbed the flavors.
- Remove from heat and let it rest for 5 minutes before serving. Fluff the biryani gently with a fork and serve hot.
