Steps
- Heat oil in a kadai or large frying pan over medium heat.
- Add cumin seeds and let them splutter, then add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and green chili; sauté for an additional 1-2 minutes until fragrant.
- Add the chopped tomatoes and green bell pepper, cooking until the tomatoes are soft and the mixture is well combined.
- Sprinkle turmeric powder, red chili powder, and salt; mix well and cook for another 2 minutes.
- Crack the eggs directly into the pan and stir continuously to scramble them with the masala mixture until they are fully cooked.
- Add garam masala and chopped coriander leaves; mix thoroughly and cook for another minute.
- Remove from heat and serve hot with roti or bread.
