  • Fresh coriander leaves - 2 tablespoons, chopped
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons

Steps

  1. Heat oil in a kadai or large frying pan over medium heat.
  2. Add cumin seeds and let them splutter, then add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and green chili; sauté for an additional 1-2 minutes until fragrant.
  4. Add the chopped tomatoes and green bell pepper, cooking until the tomatoes are soft and the mixture is well combined.
  5. Sprinkle turmeric powder, red chili powder, and salt; mix well and cook for another 2 minutes.
  6. Crack the eggs directly into the pan and stir continuously to scramble them with the masala mixture until they are fully cooked.
  7. Add garam masala and chopped coriander leaves; mix thoroughly and cook for another minute.
  8. Remove from heat and serve hot with roti or bread.
