Ingredients

  • Eggs - 4 large

  • Ginger-garlic paste - 1 tablespoon
  • Tomatoes - 2 medium, pureed
  • Bell pepper (capsicum) - 1 medium, diced
  • Green chilies - 2, slit
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat oil in a kadai or deep frying pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Stir in ginger-garlic paste and cook for another minute until the raw smell disappears.
  5. Add the pureed tomatoes and cook until the oil separates from the mixture.
  6. Add diced bell pepper and slit green chilies, cooking for about 5 minutes until soft.
  7. Stir in red chili powder, turmeric powder, and salt, mixing well.
  8. Carefully crack the eggs into the mixture, ensuring they remain whole, and cover the pan.
  9. Cook for about 5-7 minutes on low heat until the eggs are cooked to your desired doneness.
  10. Sprinkle garam masala over the top and garnish with fresh coriander before serving.
