- Tomato - 1 medium (about 100 grams)
- Ginger - 1 teaspoon (grated)
- Garlic - 1 teaspoon (minced)
- Green chili - 1 (finely chopped)
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil (preferably mustard or vegetable) - 1 tablespoon
- Fresh coriander leaves - for garnish (optional)
Steps
- Heat oil in a kadai (wok) over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until translucent.
- Stir in ginger, garlic, and green chili; cook for another minute until fragrant.
- Add diced tomatoes and cook until they soften and oil begins to separate.
- Incorporate the bell peppers and sauté for 2-3 minutes until slightly tender.
- Mix in sweet corn, coriander powder, red chili powder, and salt; stir well to combine.
- Cover the kadai and allow it to cook for another 5-7 minutes, stirring occasionally.
- Add garam masala and mix well. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
