Ingredients

  • Sweet corn (fresh or frozen) - 200 grams
  • Bell peppers (red and green) - 100 grams (50 grams each)
  • Onion - 1 medium (about 100 grams)
  • Tomato - 1 medium (about 100 grams)
  • Ginger - 1 teaspoon (grated)
  • Garlic - 1 teaspoon (minced)
  • Green chili - 1 (finely chopped)
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (preferably mustard or vegetable) - 1 tablespoon
  • Fresh coriander leaves - for garnish (optional)

Steps

  1. Heat oil in a kadai (wok) over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until translucent.
  3. Stir in ginger, garlic, and green chili; cook for another minute until fragrant.
  4. Add diced tomatoes and cook until they soften and oil begins to separate.
  5. Incorporate the bell peppers and sauté for 2-3 minutes until slightly tender.
  6. Mix in sweet corn, coriander powder, red chili powder, and salt; stir well to combine.
  7. Cover the kadai and allow it to cook for another 5-7 minutes, stirring occasionally.
  8. Add garam masala and mix well. Cook for an additional 2 minutes.
  9. Garnish with fresh coriander leaves before serving.
