Ingredients

  • Chickpeas (soaked and boiled) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Tomato (pureed) - 1 large
  • Ginger-garlic paste - 1 tablespoon
  • Green chili (slit) - 1
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Oil (for cooking) - 2 tablespoons
  • Fresh coriander leaves (chopped) - for garnish
  • All-purpose flour - 1 cup
  • Semolina - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Water - as needed for dough
  • Oil (for frying bhature) - as needed

Steps

  1. In a mixing bowl, combine all-purpose flour, semolina, baking powder, and a pinch of salt. Gradually add water to knead into a soft dough. Cover and let it rest for 20 minutes.
  2. In a pan, heat 2 tablespoons of oil and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
  4. Add the tomato puree and cook until the oil starts separating from the mixture.
  5. Add coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
  6. Add the boiled chickpeas to the pan and stir to coat them in the spice mixture. Add a little water if needed to adjust the consistency. Simmer for 10 minutes.
  7. Finish by adding garam masala and garnish with chopped coriander leaves. Set aside.
  8. Meanwhile, heat oil in a deep frying pan for the bhature. Divide the rested dough into equal portions and roll them out into circles.
  9. Fry each bhature in hot oil until puffed and golden brown. Drain on paper towels.
  10. Serve the hot Kadai Chole with bhature and enjoy!
