Kadai Chole

Ingredients

  • Chickpeas (cooked) - 400 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, pureed
  • Ginger-garlic paste - 1 tablespoon
  • Green chili - 1, slit
  • Capsicum (bell pepper) - 1 small, chopped
  • Oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a kadai or deep pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
  4. Add the pureed tomato, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
  5. Mix in the chopped capsicum and cooked chickpeas, stirring well to coat with the spices.
  6. Add a splash of water if the mixture is too thick, cover, and simmer for 10 minutes to allow the flavors to meld.
  7. Sprinkle garam masala on top, stir well, and cook for an additional 2 minutes.
  8. Garnish with fresh coriander leaves and serve hot with rice or Indian bread.
