Steps

  1. In a mixing bowl, combine Greek yogurt, ginger-garlic paste, lemon juice, Kashmiri red chili powder, garam masala, turmeric powder, cumin powder, and salt to create a marinade.
  2. Add the cubed chicken to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes.
  3. Heat 1 tablespoon of oil in a kadai or heavy pan over medium heat. Add the diced onion and sauté until translucent.
  4. Stir in the diced bell pepper and tomatoes, cooking until they soften, about 5 minutes.
  5. In a separate grill pan or oven, heat 1 tablespoon of oil and grill the marinated chicken pieces until they are cooked through and slightly charred, about 8-10 minutes, turning occasionally.
  6. Once the chicken is cooked, add it to the kadai with the sautéed vegetables, mixing well to combine the flavors. Cook for an additional 2-3 minutes.
  7. Garnish with fresh coriander leaves before serving.
