Ingredients

  • Chicken, boneless - 500 grams
  • Bell peppers (mixed colors) - 1 cup, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Kadai masala (or garam masala) - 2 teaspoons
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the oil in a kadai or a large frying pan over medium heat.
  2. Add the cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  5. Add the diced bell peppers and chopped tomatoes, cooking until the tomatoes soften.
  6. Incorporate the chicken pieces into the pan, stirring to coat them with the mixture.
  7. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  8. Cover the kadai and cook for 10-12 minutes, stirring occasionally, until the chicken is cooked through.
  9. Once the chicken is done, sprinkle the kadai masala and mix well.
  10. Cook uncovered for an additional 5 minutes to allow the flavors to meld.
  11. Garnish with fresh coriander leaves before serving.
