Ingredients

  • Basmati rice - 150 grams
  • Chicken, bone-in and skinless - 300 grams, cut into pieces
  • Onion - 1 medium, thinly sliced
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, slit
  • Kadai masala (coriander seeds, cumin seeds, dry red chilies, cloves, and black pepper) - 2 teaspoons, ground
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Cilantro (coriander leaves) - 2 tablespoons, chopped
  • Mint leaves - 2 tablespoons, chopped
  • Cooking oil - 2 tablespoons
  • Water - 300 milliliters
  • Salt - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot or kadai, heat the cooking oil over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the ginger-garlic paste and green chilies, and sauté for another minute until fragrant.
  4. Add the chopped tomatoes and cook until they soften. Stir in the turmeric powder and ground kadai masala, cooking for another 2 minutes.
  5. Add the chicken pieces to the pot, season with salt, and cook until the chicken is browned on all sides.
  6. Pour in the water and bring to a boil. Reduce the heat, cover, and simmer for 10 minutes until the chicken is cooked through.
  7. Stir in the chopped cilantro and mint leaves, then drain the soaked rice and layer it over the chicken mixture.
  8. Gently pour an additional 100 milliliters of water over the rice, cover the pot tightly, and cook on low heat for 15-20 minutes until the rice is tender and all the water is absorbed.
  9. Remove from heat and let it sit covered for 5 minutes before serving. Fluff the biryani with a fork and serve hot.
