Ingredients

  • Okra - 250 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, pureed
  • Ginger - 1 inch piece, grated
  • Garlic - 3 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Vegetable oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the okra thoroughly, pat dry, and cut off the ends. Slice them into 1-inch pieces.
  2. Heat 1 tablespoon of vegetable oil in a kadai or deep pan over medium heat. Add the okra and sauté until they are slightly browned and cooked through, about 8-10 minutes. Remove the okra from the pan and set aside.
  3. In the same pan, add another tablespoon of oil. Add cumin seeds and let them splutter.
  4. Add the chopped onion and sauté until it becomes translucent.
  5. Stir in the grated ginger, minced garlic, and slit green chili. Cook for an additional 2 minutes until fragrant.
  6. Add the pureed tomato and cook for about 5 minutes, stirring occasionally until the oil starts to separate.
  7. Mix in the coriander powder, turmeric powder, red chili powder, and salt. Cook for another 3-4 minutes.
  8. Return the sautéed okra to the pan and gently mix to coat with the spices. Cook for an additional 5 minutes on low heat.
  9. Sprinkle garam masala over the dish, mix well, and cook for another minute.
  10. Garnish with fresh coriander leaves and serve hot.
