Ingredients

  • Okra - 250 grams
  • Bell pepper (red or green) - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, diced
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the okra thoroughly and dry them completely to avoid sliminess. Cut the okra into 1-inch pieces.
  2. Heat oil in a kadai or a skillet over medium heat. Add cumin seeds and let them splutter.
  3. Add finely chopped onions and sauté until they turn translucent.
  4. Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
  5. Add the diced bell pepper and sauté for 2-3 minutes until slightly softened.
  6. Incorporate the okra pieces and cook for about 5-7 minutes, stirring occasionally, until they start to soften.
  7. Add the diced tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cover to cook for another 5 minutes.
  8. Once the okra is cooked through, sprinkle garam masala and mix gently. Cook for an additional 2 minutes.
  9. Garnish with fresh coriander leaves and serve hot with roti or rice.
