- Tomato - 1 medium, diced
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Wash the okra thoroughly and dry them completely to avoid sliminess. Cut the okra into 1-inch pieces.
- Heat oil in a kadai or a skillet over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn translucent.
- Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
- Add the diced bell pepper and sauté for 2-3 minutes until slightly softened.
- Incorporate the okra pieces and cook for about 5-7 minutes, stirring occasionally, until they start to soften.
- Add the diced tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Mix well and cover to cook for another 5 minutes.
- Once the okra is cooked through, sprinkle garam masala and mix gently. Cook for an additional 2 minutes.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
