Steps
- Heat the oil in a kadai or deep pan over medium heat.
- Add cumin seeds and let them sizzle for a few seconds.
- Add the sliced onion and sauté until translucent.
- Stir in the minced ginger and garlic; cook for another minute until fragrant.
- Add the diced bell pepper, zucchini, and julienned carrot, and stir-fry for about 5-7 minutes until they begin to soften.
- Mix in the chopped tomato, green chili, turmeric powder, coriander powder, and salt. Cook for another 5 minutes until the tomatoes break down.
- Sprinkle garam masala over the vegetables and stir well.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Remove from heat and garnish with fresh coriander before serving.
