  • Ginger - 1 teaspoon, minced
  • Garlic - 2 cloves, minced
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil (coconut or vegetable) - 2 tablespoons
  • Fresh coriander - for garnish

Steps

  1. Heat the oil in a kadai or deep pan over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the sliced onion and sauté until translucent.
  4. Stir in the minced ginger and garlic; cook for another minute until fragrant.
  5. Add the diced bell pepper, zucchini, and julienned carrot, and stir-fry for about 5-7 minutes until they begin to soften.
  6. Mix in the chopped tomato, green chili, turmeric powder, coriander powder, and salt. Cook for another 5 minutes until the tomatoes break down.
  7. Sprinkle garam masala over the vegetables and stir well.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  9. Remove from heat and garnish with fresh coriander before serving.
