- Eggplant (Baingan) - 300 grams
- Tomatoes - 2 medium (about 200 grams)
- Onion - 1 medium (about 100 grams)
- Green bell pepper - 1 medium (about 100 grams)
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Cilantro - for garnish
- Oil - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F). Prick the eggplant with a fork and roast it on a baking sheet for about 25 minutes until the skin is charred and the flesh is soft.
- Once roasted, let the eggplant cool for a few minutes, then peel off the skin and chop the flesh coarsely.
- In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent, about 3-4 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another 1-2 minutes until fragrant.
- Add chopped tomatoes and cook until they soften and oil starts to separate, about 5-7 minutes.
- Mix in coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook for another 2 minutes.
- Add the roasted eggplant and chopped green bell pepper to the pan, stirring well to combine.
- Cover and cook for 5-7 minutes, allowing the flavors to meld. Stir occasionally to prevent sticking.
- Finish by sprinkling garam masala over the dish and mix gently. Garnish with chopped cilantro before serving.
