Ingredients

  • Eggplant (Baingan) - 300 grams
  • Tomatoes - 2 medium (about 200 grams)
  • Onion - 1 medium (about 100 grams)
  • Green bell pepper - 1 medium (about 100 grams)
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cilantro - for garnish
  • Oil - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F). Prick the eggplant with a fork and roast it on a baking sheet for about 25 minutes until the skin is charred and the flesh is soft.
  2. Once roasted, let the eggplant cool for a few minutes, then peel off the skin and chop the flesh coarsely.
  3. In a pan, heat oil over medium heat. Add cumin seeds and let them splutter.
  4. Add chopped onions and sauté until they turn translucent, about 3-4 minutes.
  5. Stir in the grated ginger, minced garlic, and slit green chili. Sauté for another 1-2 minutes until fragrant.
  6. Add chopped tomatoes and cook until they soften and oil starts to separate, about 5-7 minutes.
  7. Mix in coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook for another 2 minutes.
  8. Add the roasted eggplant and chopped green bell pepper to the pan, stirring well to combine.
  9. Cover and cook for 5-7 minutes, allowing the flavors to meld. Stir occasionally to prevent sticking.
  10. Finish by sprinkling garam masala over the dish and mix gently. Garnish with chopped cilantro before serving.
