Ingredients

  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon (adjust to taste)
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons (preferably mustard or vegetable oil)
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a kadai or a deep pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Stir in the grated ginger and minced garlic, cooking for an additional minute until fragrant.
  4. Add the pureed tomatoes and cook for 5-7 minutes until the oil separates from the mixture.
  5. Mix in the diced potatoes and green bell pepper. Stir well to coat the vegetables with the spice mix.
  6. Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix everything well.
  7. Pour in 1/2 cup of water, cover the pan, and let it simmer for 15-20 minutes, or until the potatoes are tender.
  8. Sprinkle garam masala over the dish, stir gently, and cook for another 2 minutes.
  9. Garnish with fresh coriander leaves and serve hot with rice or gluten-free bread.
