- Oil - 2 tablespoons (preferably mustard or vegetable oil)
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a kadai or a deep pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Stir in the grated ginger and minced garlic, cooking for an additional minute until fragrant.
- Add the pureed tomatoes and cook for 5-7 minutes until the oil separates from the mixture.
- Mix in the diced potatoes and green bell pepper. Stir well to coat the vegetables with the spice mix.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix everything well.
- Pour in 1/2 cup of water, cover the pan, and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Sprinkle garam masala over the dish, stir gently, and cook for another 2 minutes.
- Garnish with fresh coriander leaves and serve hot with rice or gluten-free bread.
