Kachori with Chutney

- All-purpose flour - 100 grams
- Semolina - 50 grams
- Ghee (clarified butter) - 30 grams
- Water - as needed
- Salt - 1/2 teaspoon
- Yellow split peas (chana dal) - 50 grams
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Oil - for deep frying
- Mint leaves - 10 grams
- Cilantro - 10 grams
- Green chili - 1, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
Steps
- In a mixing bowl, combine the all-purpose flour, semolina, ghee, and salt. Mix well and gradually add water to form a smooth, pliable dough. Cover and let it rest for 30 minutes.
- Rinse the yellow split peas and soak them in water for 2 hours. Drain and grind them coarsely with cumin seeds, coriander powder, red chili powder, garam masala, and salt.
- Heat a pan over medium heat and add the ground split peas mixture. Cook for about 5-7 minutes, stirring continuously until fragrant. Stir in chopped coriander leaves and remove from heat to cool.
- Divide the dough into small balls (about the size of a golf ball). Flatten each ball into a small disc and place a spoonful of the filling in the center. Carefully fold the edges and seal them to form a ball again.
- Heat oil in a deep frying pan over medium heat. Once hot, gently drop the kachoris into the oil, a few at a time, and fry until they puff up and turn golden brown. Remove and drain on paper towels.
- For the chutney, blend mint leaves, cilantro, green chili, lemon juice, and salt in a food processor until smooth. Adjust seasoning as needed.
- Serve the kachoris hot with the mint-cilantro chutney on the side.
