Ingredients
- All-purpose flour - 100 grams
- Ghee (or vegetable oil) - 30 grams
- Warm water - 40 ml
- Yellow split peas - 50 grams
- Sugar - 30 grams
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (cashews and almonds) - 20 grams
- Salt - a pinch
- Oil for frying - as needed
Steps
- Soak the yellow split peas in water for about 2-3 hours, then drain.
- In a saucepan, cook the soaked peas with enough water until soft, about 15 minutes. Drain and mash them.
- In a mixing bowl, combine the mashed peas, sugar, cardamom powder, and chopped nuts. Mix well to form the filling, and set aside.
- In another bowl, combine the all-purpose flour and a pinch of salt. Add ghee and mix until the mixture resembles breadcrumbs.
- Gradually add warm water to the flour mixture and knead into a smooth dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
- Divide the dough into small balls (about the size of a golf ball). Flatten each ball into a small disc.
- Place a spoonful of the filling in the center of each disc and carefully fold the dough around the filling, sealing it tightly.
- Heat oil in a deep frying pan over medium heat. Fry the kachoris in batches until golden brown, about 4-5 minutes per side.
- Remove from oil and drain on paper towels. Serve warm.
