Ingredients
- All-purpose flour - 150 grams
- Yellow split moong dal (soaked) - 100 grams
- Potato (boiled and diced) - 1 medium
- Onion (finely chopped) - 1 small
- Tomato (finely chopped) - 1 small
- Ginger (grated) - 1 teaspoon
- Green chili (finely chopped) - 1 small
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - for frying (approx. 200 ml)
- Fresh coriander leaves (chopped) - for garnish
- Water - as needed
Steps
- In a mixing bowl, combine the all-purpose flour with a pinch of salt and enough water to knead into a soft dough. Cover and let it rest for 20 minutes.
- In a blender, grind the soaked moong dal with ginger, green chili, and salt into a coarse paste.
- Heat 1 tablespoon of oil in a pan, add cumin seeds, and allow them to splutter. Add chopped onions and sauté until golden.
- Add the ground moong dal paste to the pan, and cook for about 5-7 minutes, stirring continuously. Remove from heat and let it cool. Once cooled, make small balls from the mixture.
- Divide the dough into equal portions and roll each portion into a small circle. Place a moong dal ball in the center and fold the edges to seal, shaping it into a kachori.
- Heat oil in a deep pan for frying. Once hot, gently slide in the kachoris and fry until they are golden brown and crispy. Remove and drain on paper towels.
- In the same pan, add a little oil, then sauté chopped tomatoes, turmeric, coriander powder, and garam masala for the sabzi. Add the boiled and diced potatoes, mix well, and cook for another 5 minutes.
- Serve the hot kachoris with the potato sabzi, garnished with fresh coriander leaves.
