Ingredients

  • All-purpose flour - 150 grams
  • Yellow split moong dal (soaked) - 100 grams
  • Potato (boiled and diced) - 1 medium
  • Onion (finely chopped) - 1 small
  • Tomato (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Green chili (finely chopped) - 1 small
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - for frying (approx. 200 ml)
  • Fresh coriander leaves (chopped) - for garnish
  • Water - as needed

Steps

  1. In a mixing bowl, combine the all-purpose flour with a pinch of salt and enough water to knead into a soft dough. Cover and let it rest for 20 minutes.
  2. In a blender, grind the soaked moong dal with ginger, green chili, and salt into a coarse paste.
  3. Heat 1 tablespoon of oil in a pan, add cumin seeds, and allow them to splutter. Add chopped onions and sauté until golden.
  4. Add the ground moong dal paste to the pan, and cook for about 5-7 minutes, stirring continuously. Remove from heat and let it cool. Once cooled, make small balls from the mixture.
  5. Divide the dough into equal portions and roll each portion into a small circle. Place a moong dal ball in the center and fold the edges to seal, shaping it into a kachori.
  6. Heat oil in a deep pan for frying. Once hot, gently slide in the kachoris and fry until they are golden brown and crispy. Remove and drain on paper towels.
  7. In the same pan, add a little oil, then sauté chopped tomatoes, turmeric, coriander powder, and garam masala for the sabzi. Add the boiled and diced potatoes, mix well, and cook for another 5 minutes.
  8. Serve the hot kachoris with the potato sabzi, garnished with fresh coriander leaves.
