Kachori Rice

Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, slit
  • Tomato - 1 medium, chopped
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Frozen peas - 1/2 cup
  • Kachoris (store-bought or homemade) - 4 pieces
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle.
  3. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  4. Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
  5. Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomato softens, about 3-4 minutes.
  6. Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spice mixture.
  7. Pour in the 2 cups of water and add the frozen peas. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  8. While the rice is cooking, heat the kachoris in the oven or air fryer until crispy.
  9. Once the rice is done, fluff it with a fork and let it rest for 5 minutes before serving.
  10. Serve the kachori rice hot, garnished with fresh coriander leaves, alongside the crispy kachoris.
