Kachori Rice

- Basmati rice - 1 cup
- Water - 2 cups
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Green chili - 1, slit
- Tomato - 1 medium, chopped
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Frozen peas - 1/2 cup
- Kachoris (store-bought or homemade) - 4 pieces
- Fresh coriander leaves - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle.
- Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the ginger-garlic paste and slit green chili, cooking for another minute until fragrant.
- Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomato softens, about 3-4 minutes.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spice mixture.
- Pour in the 2 cups of water and add the frozen peas. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat the kachoris in the oven or air fryer until crispy.
- Once the rice is done, fluff it with a fork and let it rest for 5 minutes before serving.
- Serve the kachori rice hot, garnished with fresh coriander leaves, alongside the crispy kachoris.
