- Whole wheat flour - 100 grams
- Semolina (sooji) - 50 grams
- Jaggery (grated) - 80 grams
- Coconut milk - 200 ml
- Ghee (vegan butter) - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (almonds, cashews) - 30 grams
- Raisins - 2 tablespoons
- Salt - a pinch
Steps
- In a pan, heat the vegan ghee on medium flame and add the whole wheat flour and semolina. Roast the mixture for about 5-7 minutes until it turns golden brown and aromatic.
- Add the grated jaggery to the roasted flour mixture and stir well until it melts completely.
- Pour in the coconut milk gradually, mixing continuously to avoid lumps. Add the pinch of salt and cardamom powder, and continue to cook on low heat.
- Once the mixture thickens and starts to leave the sides of the pan (about 10-15 minutes), add the chopped nuts and raisins. Stir well to combine.
- Remove from heat and let it cool slightly before serving. Garnish with more nuts if desired.
