Ingredients

  • Whole wheat flour - 100 grams
  • Semolina (sooji) - 50 grams
  • Jaggery (grated) - 80 grams
  • Coconut milk - 200 ml
  • Ghee (vegan butter) - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds, cashews) - 30 grams
  • Raisins - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a pan, heat the vegan ghee on medium flame and add the whole wheat flour and semolina. Roast the mixture for about 5-7 minutes until it turns golden brown and aromatic.
  2. Add the grated jaggery to the roasted flour mixture and stir well until it melts completely.
  3. Pour in the coconut milk gradually, mixing continuously to avoid lumps. Add the pinch of salt and cardamom powder, and continue to cook on low heat.
  4. Once the mixture thickens and starts to leave the sides of the pan (about 10-15 minutes), add the chopped nuts and raisins. Stir well to combine.
  5. Remove from heat and let it cool slightly before serving. Garnish with more nuts if desired.
