- Potatoes - 300 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
- Kachori - 4 pieces (store-bought or homemade)
Steps
- Boil the potatoes in salted water until tender. Drain, peel, and mash them in a bowl.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown. Then add ginger and green chili, sauté for another minute.
- Stir in the chopped tomato and cook until soft. Add turmeric, coriander powder, and salt. Cook for another 2 minutes.
- Add the mashed potatoes to the pan, mix well, and cook for an additional 5 minutes. Stir in garam masala and remove from heat.
- In a separate pan, heat oil for frying and fry the kachoris until golden brown and crispy.
- Serve the hot kachoris with the Aloo Sabzi garnished with fresh coriander leaves.
