Ingredients

  • Potatoes - 300 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Kachori - 4 pieces (store-bought or homemade)

Steps

  1. Boil the potatoes in salted water until tender. Drain, peel, and mash them in a bowl.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown. Then add ginger and green chili, sauté for another minute.
  4. Stir in the chopped tomato and cook until soft. Add turmeric, coriander powder, and salt. Cook for another 2 minutes.
  5. Add the mashed potatoes to the pan, mix well, and cook for an additional 5 minutes. Stir in garam masala and remove from heat.
  6. In a separate pan, heat oil for frying and fry the kachoris until golden brown and crispy.
  7. Serve the hot kachoris with the Aloo Sabzi garnished with fresh coriander leaves.
