- Basmati rice - 200 grams
- Mutton (bone-in, preferably leg) - 300 grams
- Yogurt - 100 grams
- Onion - 1 medium, thinly sliced
- Garlic paste - 1 tablespoon
- Ginger paste - 1 tablespoon
- Green chilies - 2, slit
- Biryani masala - 1 tablespoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Mint leaves - 10 grams, chopped
- Coriander leaves - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Saffron strands - a pinch
- Warm milk - 2 tablespoons
- Ghee (clarified butter) - 2 tablespoons
- Salt - to taste
- Water - 500 ml
Steps
- Soak the basmati rice in water for 30 minutes, then drain.
- In a bowl, combine the mutton with yogurt, garlic paste, ginger paste, green chilies, biryani masala, cumin powder, coriander powder, garam masala, mint leaves, coriander leaves, lemon juice, and salt. Mix well and marinate for at least 30 minutes.
- In a heavy-bottomed pot, heat ghee over medium heat and fry the sliced onions until golden brown. Remove half for garnishing later.
- Add the marinated mutton to the pot with the remaining onions and cook for about 10 minutes, stirring occasionally.
- Add the soaked and drained rice over the mutton layer, spreading it evenly. Pour in 500 ml of water and gently mix to combine.
- Dissolve the saffron in warm milk and drizzle it over the rice. Cover the pot tightly with a lid.
- Cook on low heat for about 45 minutes, allowing the rice to absorb all the flavors and steam through.
- Once done, remove from heat and let it rest for 10 minutes before fluffing with a fork. Garnish with the reserved fried onions and serve hot.
