Steps
- In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, yogurt, and water to form a smooth batter. Let it rest for 30 minutes.
- In a saucepan, combine sugar and 200 ml water to prepare the syrup. Heat until the sugar dissolves, then add cardamom powder and saffron strands. Keep it warm.
- In another saucepan, bring milk to a boil, then lower the heat and simmer, stirring frequently until it thickens (about 15-20 minutes). Stir in condensed milk and set aside.
- Heat ghee in a deep frying pan. Fill a piping bag with the batter, and pipe spiral shapes into the hot ghee, frying until golden and crisp on both sides.
- Remove the jalebis from the ghee and immediately dip them in the warm sugar syrup for a few seconds, ensuring they are well coated.
- Serve the jalebis hot, topped with a generous amount of rabri and garnished with chopped nuts.
