- All-purpose flour - 100 grams
- Cornstarch - 25 grams
- Baking powder - 1/4 teaspoon
- Yogurt - 50 grams
- Water - 150 ml
- Saffron strands - a pinch
- Turmeric powder - 1/4 teaspoon
- Sugar - 200 grams
- Cardamom powder - 1/2 teaspoon
- Oil for frying - 500 ml
- Rose water - 1 teaspoon
Steps
- In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, yogurt, and water to form a smooth batter. Let it rest for 30 minutes.
- In a saucepan, combine sugar, 150 ml of water, saffron strands, and cardamom powder. Heat until the sugar dissolves, then simmer for 5 minutes to create a syrup.
- After the batter has rested, add turmeric powder for color and mix well. Transfer the batter into a piping bag or squeeze bottle.
- Heat oil in a deep frying pan over medium heat. Once hot, pipe the batter into spiral shapes directly into the oil, frying until golden brown on both sides.
- Remove the jalebis from the oil and immediately immerse them in the warm sugar syrup for 10-15 seconds, then take them out and let them cool slightly.
- Serve warm, drizzled with a little rose water for added flavor.
