  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Boil a pot of salted water and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the seal oil in a large skillet over medium heat.
  3. Add the chopped onion and cook until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes, until they start to soften.
  6. Add the fresh spinach to the skillet and stir until wilted, about 2-3 minutes.
  7. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it directly to the skillet with the vegetables.
  8. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  9. Season with salt and black pepper to taste, then serve garnished with fresh parsley.
