- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Boil a pot of salted water and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the seal oil in a large skillet over medium heat.
- Add the chopped onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes, until they start to soften.
- Add the fresh spinach to the skillet and stir until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it directly to the skillet with the vegetables.
- Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Season with salt and black pepper to taste, then serve garnished with fresh parsley.
