  • Unsweetened coconut cream - 100 milliliters
  • Mixed berries (blueberries, raspberries, cranberries) - 150 grams
  • Honey - 1 tablespoon
  • Chopped nuts (walnuts or almonds) - 30 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a medium pot, combine the rinsed wild rice and 500 milliliters of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the berry mixture by combining the mixed berries, honey, vanilla extract, and a pinch of salt in a bowl. Gently mash the berries with a fork to release their juices.
  4. Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes.
  5. In a serving bowl, combine the cooked wild rice and coconut cream, mixing until creamy.
