- Basmati rice - 200 grams
- Chicken, cut into pieces - 300 grams
- Yogurt - 100 grams
- Onion, thinly sliced - 1 medium
- Tomato, chopped - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Biryani masala - 1 tablespoon
- Green chilies, slit - 2
- Mint leaves, chopped - 2 tablespoons
- Cilantro (coriander), chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ghee (clarified butter) - 2 tablespoons
- Cooking oil - 1 tablespoon
- Whole spices (bay leaf, cloves, cinnamon stick) - 1 each
- Salt - to taste
- Water - 500 ml
Steps
- Wash the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Let it marinate for at least 30 minutes.
- In a heavy-bottomed pot, heat ghee and oil over medium heat. Add sliced onions and sauté until golden brown. Reserve half for garnishing.
- Add the marinated chicken to the pot and cook for about 10 minutes until the chicken is browned and cooked through.
- Stir in the chopped tomatoes, green chilies, mint, and cilantro. Cook for another 5 minutes until the tomatoes soften.
- In a separate pot, bring 500 ml of water to a boil. Add the soaked rice and whole spices. Cook until the rice is about 70% cooked, then drain the water.
- Layer the partially cooked rice over the chicken in the pot. Spread the reserved fried onions on top.
- Cover the pot tightly and cook on low heat (dum) for about 20-25 minutes, allowing the flavors to meld and the rice to finish cooking.
- Once done, gently fluff the biryani with a fork before serving. Serve hot with raita or salad.
