Ingredients

  • Basmati rice - 200 grams
  • Chicken, cut into pieces - 300 grams
  • Yogurt - 100 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Biryani masala - 1 tablespoon
  • Green chilies, slit - 2
  • Mint leaves, chopped - 2 tablespoons
  • Cilantro (coriander), chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ghee (clarified butter) - 2 tablespoons
  • Cooking oil - 1 tablespoon
  • Whole spices (bay leaf, cloves, cinnamon stick) - 1 each
  • Salt - to taste
  • Water - 500 ml

Steps

  1. Wash the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, marinate the chicken with yogurt, ginger-garlic paste, biryani masala, lemon juice, and salt. Let it marinate for at least 30 minutes.
  3. In a heavy-bottomed pot, heat ghee and oil over medium heat. Add sliced onions and sauté until golden brown. Reserve half for garnishing.
  4. Add the marinated chicken to the pot and cook for about 10 minutes until the chicken is browned and cooked through.
  5. Stir in the chopped tomatoes, green chilies, mint, and cilantro. Cook for another 5 minutes until the tomatoes soften.
  6. In a separate pot, bring 500 ml of water to a boil. Add the soaked rice and whole spices. Cook until the rice is about 70% cooked, then drain the water.
  7. Layer the partially cooked rice over the chicken in the pot. Spread the reserved fried onions on top.
  8. Cover the pot tightly and cook on low heat (dum) for about 20-25 minutes, allowing the flavors to meld and the rice to finish cooking.
  9. Once done, gently fluff the biryani with a fork before serving. Serve hot with raita or salad.
