Ingredients

  • Duck breast - 200 grams
  • Huckleberries - 100 grams
  • Almond flour - 150 grams
  • Flaxseed meal - 30 grams
  • Olive oil - 2 tablespoons
  • Water - 4 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Fresh thyme - 1 teaspoon (optional)
  • Arugula - 50 grams (for topping)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix almond flour, flaxseed meal, salt, and garlic powder.
  3. Add olive oil and water to the dry ingredients, mixing until a dough forms.
  4. Roll out the dough between two pieces of parchment paper to form a pizza base, about 1/2 cm thick.
  5. Place the rolled dough on a pizza stone or baking tray and bake for 10 minutes until golden.
  6. While the crust is baking, season the duck breast with salt, black pepper, and thyme (if using).
  7. In a skillet over medium heat, sear the duck breast skin-side down for about 6-8 minutes until the skin is crispy, then flip and cook for another 4-5 minutes until medium-rare.
  8. Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
  9. In the same skillet, add huckleberries and cook for 2-3 minutes until they burst and soften.
  10. Once the crust is done, layer the duck slices on top, followed by the huckleberries.
  11. Return the pizza to the oven for an additional 5 minutes to heat through.
  12. Remove from the oven, top with fresh arugula, slice, and serve.
