- Duck breast - 200 grams
- Huckleberries - 100 grams
- Almond flour - 150 grams
- Flaxseed meal - 30 grams
- Olive oil - 2 tablespoons
- Water - 4 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Fresh thyme - 1 teaspoon (optional)
- Arugula - 50 grams (for topping)
Steps
- Preheat your oven to 200°C (400°F).
- In a bowl, mix almond flour, flaxseed meal, salt, and garlic powder.
- Add olive oil and water to the dry ingredients, mixing until a dough forms.
- Roll out the dough between two pieces of parchment paper to form a pizza base, about 1/2 cm thick.
- Place the rolled dough on a pizza stone or baking tray and bake for 10 minutes until golden.
- While the crust is baking, season the duck breast with salt, black pepper, and thyme (if using).
- In a skillet over medium heat, sear the duck breast skin-side down for about 6-8 minutes until the skin is crispy, then flip and cook for another 4-5 minutes until medium-rare.
- Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
- In the same skillet, add huckleberries and cook for 2-3 minutes until they burst and soften.
- Once the crust is done, layer the duck slices on top, followed by the huckleberries.
- Return the pizza to the oven for an additional 5 minutes to heat through.
- Remove from the oven, top with fresh arugula, slice, and serve.
