Ingredients

  • Squirrel - 2 whole, cleaned (about 500g)
  • Honey - 60ml
  • Ghee (clarified butter) - 30ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, mix honey, ghee, minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and black pepper to create a marinade.
  2. Coat the cleaned squirrel thoroughly with the marinade, cover, and let it marinate in the refrigerator for at least 1 hour (preferably overnight for best flavor).
  3. Preheat your grill or BBQ to medium heat.
  4. Remove the squirrel from the marinade and reserve the excess marinade for basting.
  5. Place the squirrel on the grill and cook for approximately 45 minutes, turning occasionally and basting with the reserved marinade every 15 minutes.
  6. Check for doneness; the internal temperature should reach at least 75°C (165°F).
  7. Once cooked, remove from the grill and let it rest for 10 minutes before serving.
  8. Garnish with fresh cilantro and serve with a side of roasted vegetables or a fresh salad.
