Ingredients

  • Venison steak - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Carrots - 100 grams, diced
  • Parsnips - 100 grams, diced
  • Sweet potato - 200 grams, diced
  • Chicken broth - 100 ml

Steps

  1. In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
  2. Add the venison steak to the marinade, ensuring it's well-coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your oven to 200°C (400°F).
  4. In a baking dish, combine the diced carrots, parsnips, and sweet potato. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  5. Roast the root vegetables in the preheated oven for about 25 minutes, or until tender and slightly caramelized.
  6. While the vegetables are roasting, heat a skillet over medium-high heat. Remove the venison from the marinade and sear it in the hot skillet for 3-4 minutes on each side for medium-rare.
  7. Once cooked, remove the venison from the skillet and let it rest for a few minutes before slicing.
  8. In the same skillet, pour in the chicken broth and scrape up any bits from the bottom. Allow to simmer for a couple of minutes to reduce slightly.
  9. Slice the venison and serve it alongside the roasted root vegetables, drizzled with the broth sauce.
