- Venison steak - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Carrots - 100 grams, diced
- Parsnips - 100 grams, diced
- Sweet potato - 200 grams, diced
- Chicken broth - 100 ml
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
- Add the venison steak to the marinade, ensuring it's well-coated. Cover and refrigerate for at least 30 minutes.
- Preheat your oven to 200°C (400°F).
- In a baking dish, combine the diced carrots, parsnips, and sweet potato. Drizzle with olive oil, season with salt and pepper, and toss to coat.
- Roast the root vegetables in the preheated oven for about 25 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, heat a skillet over medium-high heat. Remove the venison from the marinade and sear it in the hot skillet for 3-4 minutes on each side for medium-rare.
- Once cooked, remove the venison from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, pour in the chicken broth and scrape up any bits from the bottom. Allow to simmer for a couple of minutes to reduce slightly.
- Slice the venison and serve it alongside the roasted root vegetables, drizzled with the broth sauce.
