  • Carrots - 2 medium, sliced
  • Celery - 2 stalks, chopped
  • Tomato - 1 large, diced
  • Chicken broth - 500 ml (or vegetable broth)
  • Fresh thyme - 2 teaspoons, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sautéing until the onion is translucent.
  2. Add the rabbit chunks to the pot, browning them on all sides for about 5-7 minutes.
  3. Stir in the sliced carrots and chopped celery, cooking for an additional 3-4 minutes.
  4. Add the diced tomato, chicken broth, thyme, rosemary, bay leaf, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes or until the rabbit is tender.
  6. Taste and adjust the seasoning if necessary. Remove the bay leaf before serving.
  7. Garnish with fresh cilantro and serve hot.
