Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Coconut oil - 1 tablespoon
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Fresh ginger, grated - 1 teaspoon
  • Green chili, finely chopped - 1 small
  • Fresh cilantro, chopped - 1/4 cup
  • Fresh mint, chopped - 1/4 cup
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes, halved - 1 cup
  • Cucumber, diced - 1 cup

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium pot, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
  3. While the quinoa is cooking, heat the coconut oil in a skillet over medium heat. Add the mustard seeds and cumin seeds, and sauté until they start to crackle, about 1 minute.
  4. Add the grated ginger and chopped green chili to the skillet, and sauté for another 1-2 minutes until fragrant.
  5. Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the spices. Stir in the chopped cilantro, mint, lemon juice, salt, and black pepper, mixing well to combine.
  6. Remove from heat and let it cool slightly before serving.
  7. To serve, divide the herbed quinoa among two bowls and top with halved cherry tomatoes and diced cucumber.
