- Quinoa - 1 cup
- Water - 2 cups
- Coconut oil - 1 tablespoon
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Fresh ginger, grated - 1 teaspoon
- Green chili, finely chopped - 1 small
- Fresh cilantro, chopped - 1/4 cup
- Fresh mint, chopped - 1/4 cup
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes, halved - 1 cup
- Cucumber, diced - 1 cup
Steps
- Rinse the quinoa under cold water in a fine mesh strainer until the water runs clear.
- In a medium pot, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed.
- While the quinoa is cooking, heat the coconut oil in a skillet over medium heat. Add the mustard seeds and cumin seeds, and sauté until they start to crackle, about 1 minute.
- Add the grated ginger and chopped green chili to the skillet, and sauté for another 1-2 minutes until fragrant.
- Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the spices. Stir in the chopped cilantro, mint, lemon juice, salt, and black pepper, mixing well to combine.
- Remove from heat and let it cool slightly before serving.
- To serve, divide the herbed quinoa among two bowls and top with halved cherry tomatoes and diced cucumber.
