Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Fresh cilantro - 1/4 cup, chopped
  • Fresh mint - 1/4 cup, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic - 2 cloves, minced

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and water is absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  5. Fluff the quinoa with a fork and transfer it to a mixing bowl.
  6. Add the chopped cilantro, mint, lemon juice, olive oil, cumin powder, salt, black pepper, and minced garlic to the bowl.
