- Fresh mint - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic - 2 cloves, minced
Steps
- Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the quinoa with a fork and transfer it to a mixing bowl.
- Add the chopped cilantro, mint, lemon juice, olive oil, cumin powder, salt, black pepper, and minced garlic to the bowl.
