Ingredients

  • Rabbit - 300 grams, cut into pieces
  • Cauliflower - 300 grams, grated
  • Almond flour - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the grated cauliflower with almond flour, egg, salt, and pepper until well combined to form the pizza crust.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round crust about 1 cm thick.
  4. Bake the crust in the preheated oven for 20 minutes, or until golden brown.
  5. While the crust is baking, marinate the rabbit pieces with olive oil, minced garlic, rosemary, thyme, cumin, coriander, turmeric, salt, and black pepper. Let it sit for about 10 minutes.
  6. In a skillet over medium heat, sear the marinated rabbit pieces for about 5 minutes on each side until browned.
  7. Once the crust is done baking, place the seared rabbit pieces on top of the crust.
  8. Return the pizza to the oven and bake for an additional 15-20 minutes, until the rabbit is cooked through.
  9. Garnish with fresh cilantro before serving.
