Ingredients

  • Venison or game meat - 300 grams, diced
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh mint - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the coconut oil over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until the onion is translucent.
  3. Add the diced venison or game meat to the skillet and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the diced carrot, zucchini, and bell pepper. Cook for another 5 minutes until the vegetables are slightly softened.
  5. Add the chopped cilantro, mint, thyme, turmeric, cumin, coriander, salt, and black pepper to the skillet. Mix well to combine all the flavors.
  6. Transfer the mixture to a baking dish and drizzle with lemon juice.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
  9. Serve warm, garnished with extra fresh herbs if desired.
