- Venison or game meat - 300 grams, diced
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced

- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Fresh cilantro - 2 tablespoons, chopped
- Fresh mint - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the coconut oil over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until the onion is translucent.
- Add the diced venison or game meat to the skillet and cook until browned on all sides, about 5-7 minutes.
- Stir in the diced carrot, zucchini, and bell pepper. Cook for another 5 minutes until the vegetables are slightly softened.
- Add the chopped cilantro, mint, thyme, turmeric, cumin, coriander, salt, and black pepper to the skillet. Mix well to combine all the flavors.
- Transfer the mixture to a baking dish and drizzle with lemon juice.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
- Serve warm, garnished with extra fresh herbs if desired.
